Preheat your oven to 375 degrees. Clean and cut the fat of off the chicken breasts. I like to line my baking sheet with aluminum foil but this isn't necessary. Bake the chicken for 25-30 minutes, or until cooked all the way through.
Once the chicken is cooked put it in the bowl of the standing mixer while it is still hot. While using the paddle attachment turn the mixer on low. As it starts to shred the chicken you can turn it up faster to shred the chicken into finer pieces.
Once it is as shredded, turn the mixer off and there you go! Evenly shredded chicken :) This can also be done with a cooked pork shoulder for pulled pork sandwiches.
